Thinking of your neighbors during the holidays? Give them date orange loaves wrapped in parchment and tied with festive ribbon. They’ll never guess it’s gluten-free!
⅓ cup coconut flour
1 teaspoon baking soda
¼ teaspoon sea salt
4 large eggs
½ cup coconut oil, melted over very low heat
1 tablespoon firmly packed orange zest
½ cup Medjool dates, pitted and chopped
Preheat the oven to 350°F. Grease a 5 by 3-inch mini loaf pan with coconut oil.
In a food processor, pulse together the coconut flour, baking soda, and salt. Add the eggs, coconut oil, and orange zest and pulse until thoroughly combined. Remove the blade from the food processor and stir in the dates.
Scoop the batter into the prepared loaf pan and bake for 25 to 35 minutes, until a knife inserted into the center of the loaf comes out with just a few moist crumbs attached. Let the bread cool in the pan for 1 hour, then serve.
